Maybe you’re panicking to think of a satisfying dish for a vegetarian guest, or perhaps you’re trying to be healthy, or need a quick option for a vegetarian. These are my favorites that I like to make for my Thanksgiving table. I would love to hear other options if you have suggestions in the comments!
Appetizer:

I’m not crazy about cranberry sauce on it’s own, but with the smooth, melty cheese and the crunch of the walnut, I would eat this all day: Simple Bites | Baked Brie with Cranberry Sauce and Walnuts
Side dish:
The classic option (perhaps add extra fresh mushrooms?): Campbells | Green Bean Casserole
Alternative to the classic dinner roll or crescent roll: Bless This Mess Please | Sweet Potato Biscuits
I love mashed potatoes, but a lot of the time the gravy is not vegetarian friendly so I’d like to have this instead: The Kitchn | Potato Squash and Goat Cheese Gratin

And for the mac n’cheese lovers (not that I’m opposed to the classic), I find this sweet option to be ah-mazing: Healthy Food for Living | Sweet Potato and Brie Mac N’ Cheese
Dessert:
APPLE PIE: Pillsbury | Perfect Apple Pie
My personal favorite pie of all time (only when my mom makes it) (make sure it doesn’t have gelatin): All Recipes | Grandma’s Lemon Meringue Pie
